Maybe not an Infection Form, but as others have noted the Brain Form on Installation 05 ("Gravemind") had assimilated the monitor of that Installation ("2401 Penitent Tangent") and appeared to use functions of that Installation routinely used by monitors and not by others (the teleport effect). As monitors are more durable than sentinels, I'd have to say that sentinels would be even more vulnerable... just less valuable, and probably not worth saving given the risks involved as compared to the low risk and high reward of possessing a monitor.

Also note that the monitor of Installation 04 ("343 Guilty Spark") was aware that subversion of a monitor was feared by the Forerunner, as stated so in the cartography station on Installation 00.

-- Steve'll also note that Gravemind was working danged hard to assimilate Cortana, and making headway too given how the "flashbacks" were going.
