Not infect in the conventional sense (food) but at least control. Cortana was being assimilated by the Gravemind. The IAC's Pelicans were being flown by Flood blobs. The Flood clearly have a method for tapping into advanced organic nervous systems. A synthetic "brain" would be just as easy to rewrite. You probably wouldn't get khaki blobs all over the place, but you sure could get evil Sentinels.
