I think the answer is simply that they *did* not extract a single clue as to where Earth is.

The Covenant are obviously zealots, and thus probably very single-minded about whatever their actual goal is. If their end goal is not the actual extermination of humanity, but is (say) the cleansing of any planets they come across, then they may not particularly care where Earth is -- they'll cleanse it when they arrive. Also, since their attitude problem appears to be religious in nature, they may feel that it's simply inappropriate to talk to non-Covenant species (except, of course, for their one-line witticisms punctuated with a nuke...).

Now, as to why the Covenant force would follow the Pillar of Autumn when it jumps to the Halo system, but then they don't carefully annihilate the humans once there, I think there are two basic reasons:

First, why do they bother following the Pillar of Autumn? Until the PoA appeared, the Covenant got nothing more than token resistance from the outposts they destroyed; in comes the PoA which kicks the butt of several of their ships. Clearly that is going to mark the PoA for special attention after that.

Second, why don't they just nuke the ring to get rid of the humans? First, they may not know immediately that the humans landed there: the PoA was destroyed, and the escape pods may have left immediately before the PoA was destroyed so they could look like simple fragments of the ship (until they felt that the Covenant's attention was elsewhere). Second, we've been told that the Halo is as much of a surprise to the Covenant as to the humans; they're not going to destroy it until they've understood it. If they know some humans survived landing on the ring, they probably figure that without an intact ship, the individual humans can be swept aside by Covenant patrols during the normal course of exploration.
