Try putting yourself in his shoes.

His ship has just been pulled inside a hollow planet and is trapped.

Here's a big one: the reason the ship was put into a position that allowed it to be sucked in was because he was responding to a distress call which, to his knowledge at the time, was originating from Cortana and the Master Chief.

It was knocked to the ground and damaged, whereupon it came under mass attack by Covenant and a completely unknown hostile force that would come to be known as Prometheans.
This also puts them into a First Contact scenario.

He knows his ship is damaged and vulnerable, and it's the pride of the UNSC.
There is a huge responsibility on his shoulders, both lives and equipment.

He knows Cortana has exceeded her lifespan, but let's note that he doesn't order her decommissioned immediately.
Actually, he let's her data chip be inserted into Infinity!

The Master Chief might be a hero, but he's also been MIA for 5 years. Del Rio doesn't know him personally and a certain caution is quite justified. Anything could have happened in that time which may have affected his mental stability.

He's actually quite reasonable to start with, about saying they have to follow protocol and leave.

Then Cortana has her little rampancy fit, sending a surge throughout the bridge.

That was a tipping point. Only then does he order her decommissioned. Why wouldn't he after that?

Then John refuses the firm, but not rabid, order to give him Cortana's chip.

Only now do things really tip over and starts screaming.

Let's remember again that he probably blames the two of them for getting his ship in this position to start with because of the distress signal.

Then his own crew starts hesitating to carry out his orders, which just exacerbates things.

In short, I think there are quite a few reasons why he acts the way he does.
He's also not as outright unaccommodating as we tend to think either.
Massive stress can explain why he's not a barrel of laughs.
Cortana's evident instability takes things to the boiling point, but it's John's refusal to surrender her (Both disobeying an order in the most direct sense, but also in breach of UNSC Regulations regarding AI's) that makes him explode.

It's not good form that he flips like that, absolutely not...
...but it's also kind of understandable.
