Could be an issue of consistant ability. Cortana seemed extremely pleased with herself in PoA when she was analysing the situation, lending plausibility to the idea that it was perhaps unusual. Historically, even horribly outmatched military forces have the occasional beastly victory of beastliness. The UNSC, through either having tactical drop on the Covenant and taking full advantage of it, or otherwise pulling off ninja stuffs, had occasionally had impressive tactical performances.
A bunch of Covenant cruisers are floating about, surveying a sacred artifact, and their main goal is probably to avoid letting it be damaged. Suddenly, a UNSC vessel with almost unique internal structure, a whacky and rare weaponry scheme, and no qualms about damaging the hula hoop pops out of nowhere? It seems possible that Covenant tactics just weren't entirely prepared for it at the moment and the UNSC had a stroke of luck. It's when the UNSC consistantly beats up Covenant forces in head-to-head fights where neither side is being taken off-guard by anything that people start to complain. It's still a little awkward, but it makes some sense. Maybe.
