I agree that the pistol is a very uselful weapon, especially on lower difficulty levels. Then it's better to pick up a second one and go crazy. I think that in terms of weapons, dual pistols are my favorite to use, and I think it's because I've seen to many action movies where the badass cop/special agent/mercenary/fruitake/navy seal/FBI agent come busting with with some cold steel in each fist spitting lead into suckas that get in the way. Hell yes.
The pistol(s) is great in a lot of applications where the AR doesn't make sense. In terms of game strategy, it's smarter to use the pistol where it will work just fine instaed of wasting AR ammo, like coming across one or two weak baddies or, like you said, sniping.
While the pistols are nice, I still think that the best all-around weapon in the trilogy is the AR/MA. It holds a decent amount of ammo and does become a blazing death gun when you're hitting both triggers at once. But that's just my opinion.
So whenever the punks you hang out with start complaining about pistols, just remember: they wouldn't be giving you that kind of jive-talk if you had a real one and they were on the business end of it.
