I'm not a pro gamer, by any measure, but I tend to aim at the upper torso until the shield pops and then go for the head shot. The important thing to remember for the DMR (pistol too) is to wait for that last shot. IMO, you really need to wait for the reticle bloom to reset so that you can be really accurate with the headshot. This is really tough to do when you're in a battle and your shield is being chipped away or is nonexistent, but with the DMR, patience is your friend. Now don't get me wrong, I'm not at the point where I'm patient all the time (I still nerve up some and spam the trigger), but I've already walked away from numerous battles as the victor just by being the more patient of the two. And remember, proximity to your opponent plays into this as well. The closer you are to the target, the less patient you need to be.

Oh, and try to aim with your feet. That's one of the best tips I've ever received about playing Halo. For me, fixing your reticle in a spot and strafing to hit a target is much easier than trying to paint the target all the time with your "aiming" thumb stick.
