They do if you don't want your readers to be hungry.
But in all seriousness, I think the importance of getting a review out as early as possible, before launch if possible, is proportional to how high expectations are for the game. People eagerly read pre-release reviews of games they have every intention of purchasing because they are hungry for any information about the title at all (although not too much, hence all the care to avoid spoilers).
The less interested the audience is in the title, the less important it is to be out early. You can wait until after release, check out the reviews, and make a purchase decision later. For a game you've already decided to buy, a review is pretty pointless after you've bought the game-- and that means the page impressions you would have given to the gaming site reviewing the title are lost forever.
