How did the flood know?

Here is my question. How did the flood know to capture Captain Keys, instead of infecting him right off the bat. The anwer, I think, was that the flood know the knowledge of each host infected. That the can share knowledge. The reason they didn't infect the captain is that the knew he knew a lot about the covenent ships (probably when they infected the marine guarding the bunker), so they could use him to fly the T&R off of Halo. A question that pops up is why didn't the flood infect a covie captain. Either the Captain was evacuted (along with the covies that would know how to fly the T&R) he was hiding, or maybe hiss mental powers where so acute, that once he was infected by the big blob thing, maybe his memories couldn't be tapped.
