lol, you're in the minority there my friend, though you are our resident RL scientist-engineer type with working at a science museum, worked with a ALM team and who knows how many other things. ;P

Its perhaps not quite so extreme. Come to think of it, perhaps a better example would be the F-16C to the F-16E.
It's even got the whole 'life jacket' thing going on! =p

On the general issue, my position isn't so straight forward. Or maybe it is and its just a bit inconvenient...
See, many of the aspects from the universe that appeal to me the most have been vastly redesigned between almost every single game, and I'm talking about the traits of an actual species. The Elites have gone through 3 hefty overhauls in their actual physical design (4 if you include Halo Wars)
When the fundamentals like that have changed so often (and with the Elites, I don't really feel like the changes since Halo 2 have been for the best) I just have a more difficult time getting upset over things like armour, ship designs, guns, etc.
Story explanation, no story explanation, or a little from column A and B.
