Having only two eyes, it's all to easy for us to think that a 3rd eye would be redundant when it comes to depth perception. If you have red-green color blindness, the third color (red) may seem redundant to you, since your perception of the world seems just fine to you - it's only becaue everyone else tells you what you're missing that you recognize the absense. Two eyes provide the perception of distance from an object, but they also provide a greater perception of texture through the small discrepancies that exists between the information received from both eyes. A third eye could provide even more information on 3D texture that we cannot conceive of with our binocular vision.
