In all versions of Eternal until 1.2 alpha 5, the HD textures were implemented with just normal MML, not in a plugin (and consequently, could not be turned off, so you would never see the low-res, non-HD textures). Alphas come before betas, so 1.2 beta 1 (which came right after 1.2 alpha 5) is supposed to have the HD textures in a plugin, but 1.1 definitely shouldn't. That's what confused me; it sounded like you said 1.1 had a plugin.
Additionally, during the early 1.2 betas, I was using those "garish" plain textures in the low-res, non-HD slots for development purposes; that's what you were supposed to see with the HD textures turned off, in those builds. With beta 5 Lia adapted the new HD textures into low-res, non-HD versions, so that's what you'll see now in the newer betas, even with the HD textures turned off, though of course the HD textures should still look a lot nicer.

Hmm, now that is mysterious, and suggests that the plugin format may not be the problem. Can you try all the way back to alpha 1 and see if that still crashes you too? And if it doesn't, try alpha 2, and 3. That might help us figure out when the problematic whatever got introduced.
Also for each alpha, can you try starting a level from each different texture set ? You can try The Far Side of Nowhere, Deja Vu All Over Again, Dysmentria, To Sleep Perchance to Dream, and S'pht'ia. If some of them work and others don't, that really helps us narrow down where the problem is.
(Each alpha introduces new textures for one more texture set. I'm pretty sure alpha 1 only introduced new textures for the set used on Far Side of Nowhere, so all the other levels in that list should be unchanged since 1.1 and hopefully still work fine even if that first level doesn't. Alpha 2 introduced new textures for the set used on Deja Vu All Over Again, but the rest should be unchanged since 1.1. Alpha 3 introduced new textures for the set used on Dysmentria, alpha 4 new textures for the set used on S'pht'ia, and alpha 5 the last set used on To Sleep Perchance To Dream).
