What makes Infinity nice for speed-running, as far as I can tell, is that there's loads of places where you can skip entire levels (including some of the hardest ones in the game). Marathon 2 would also be okay for speed-running, because even though there's no real shortcuts, there likewise aren't any places where you'll get totally bogged down trying to do one thing.
The original Marathon, on the other hand, would be a real pain this way: no shortcuts, lots of places to get bogged down (Colony Ship For Sale, Cheap probably being the worst of the bunch), and really nasty combat that's hard to avoid getting caught up in (Ingue Ferroque, for one), not to mention the fact that a lot of levels involve running around like a chicken with your head cut off trying to find the last lonely little Wasp or Fighter that somehow escaped death earlier in the level (The Rose, Pfhoraphobia, etc).
I never really do speed-runs, but it's pretty clear that the Marathon games get progressively better for speed-running as you go along.
