Hmmm, maybe if I explain it as I see it in my head?

Okay, so you've just blown out Spark. (Bad pun.) You activate Halo, time to go. Take down some Sentinels, duck through familiar corridors, mow through Flood.

So now you come out again into a valley, beyond which is the raw framework of Halo that you must drive across to get to Forward Unto Dawn. You and Arby hop into the late Johnson's Hog when--BAM!

The valley walls start crumbling down around you. Gravemind drags himself up from the depths and blocks the end of the valley. He can't stop Halo from firing, but is intent on keeping those whom thwarted him from escaping.

Gameplay consists of zigzagging through the valley, dodging obstacles and shooting at his head at the opposite end. I would prefer this be based more on your position than any kind of Nintendo pattern; he reacts to the player.

Terrain is irregular. Think the final encounter of LNoS; lots of hills and natural overpasses. If you keep to the sides, Gravemind will shake down rocks to disrupt your movement. If you try to run down the middle, expect tentacles to swat at you. Passing into any open areas or stopping in a perceived "safe zone" will result in Gravemind spewing a mob of Flood combat or carrier forms.

No contrived moments of vulnerability. (I'm looking at you, Tartarus.)

In single player, you could either:

A) drive yourself and focus on getting to the end of the valley. Regardless of Arby's aim, reaching the end will trigger the next sequence.

B) man the Gauss cannon and let Arby drive. His route depends entirely on AI pathfinding. He'll eventually get you to the other side, but you can trigger the next sequence yourself by focusing fire on Gravemind's head as it bobs around.

In co-op, this sequence could be played out endlessly, although you'd have to put up with Cortana's constant insistence that "We don't have time for this, Chief!" See the gaming principle of unenforced urgency.

(With three or more players, you get a Prowler instead of a Gauss Hog. You could still do this with four Ghosts too, if you brought them from outside the control room. As with the trench run, first player to cross the finish line ends the sequence.)

Whichever approach you take, the next sequence will always be the same. Gravemind's head goes asplode in a satisfying spray of chunks. Chief makes a Bond One Liner. You think Gravemind's dead, but then he garbles off some nonsense about being deathless. Cortana reminds you that only Halo can seal the deal and you have to book it.

And back to trench run. We're talking maaaaaybe 3-5 minutes of additional gameplay, if you don't purposely prolong it. Just enough to give the player a personal "take that" moment to Gravemind.
