Well, in the field, it's stripped off the stock, loaded into a truck, and brought in for processing. There, it's dumped onto a conveyer, washed, and run through the huskers. I won't go into detail on how these work, because I work on the far side of the plant and don't quite remember what all happens, but the corn husker strips the husk off without damaging the kernels. The cobs are then run through a cutter, which slices the kernels off, or they are left as-is, and we sell them as 6-inch or 3-inch cobs. Cobs and kernels, after a little blanching, are then sent through freezer tunnels and are packaged on the other side of the plant. That's where I work. Now, when you raise organic produce, you are either using ineffective pesticides or no pesticides at all. Which means you get more bugs, and less food. I mean, seriously, we run peas through a machine that identifies and removes insects and bad produce, and there's still a dozen caterpillars per tote*. You also get more stuff that eats the bugs. So, you've got field mice, and you've got rats. Now, imagine a large rat after it's been clubbed with corn cobs, run through the huskers, blanched, and flash frozen. Head's probably a little deformed, but everything behind the neck is missing the skin, and you're lucky to have any limbs. We call them 'red cobs'. *Tote. That's a huge cardboard box, about 50 cubic in volume. We fill them with product and ship them elsewhere to be packaged under a brand name.
