For them to still believe their religion is true means to reject what Mendicant Bias told them, but if they did that then they wouldn't have bothered launching their "Kill All Humans!" campaign. They clearly believed what MB told them and set out to eradicate humanity as a response (see Contact Harvest, pgs. 273-278). Of course, fundamentalist variants of religion can result in believers holding multiple contradictory beliefs ("We're a religion of peace. Kill the heretics!"), so perhaps they still clung to their beliefs in the face of their own gods' creation telling them their faith is false but decided to kill humanity anyway (thus committing deicide) just to be safe (the masses could come to believe the Oracles over the Prophets and thus reject their faith, as the Heretic faction and eventually the Elites as a whole did).
Of course, there's very little to suggest that they didn't fully believe what MB said to them, and their sermons and other pious commentary were just posturing in order to keep the flock in line. I think it's just as likely that the Hierarchs knew full well on up to the end that their religion was false because of what MB said to them, but they'd rather kill everything, including themselves, than let the Covenant fall apart, as I explained in my post above.
