Best pancake recipe - no blasphemy

Just got this recipe because after I tasted the pancakes I declared them the best I had ever had.
If you have a better one I'd like to see it.

Instant Pancake Mix by Good Eats Keeper Recipe hundreds of fire star ratings
Recipe courtesy Alton Brown from the show on the food network, “Good Eats”

Make exactly as called for. Basic instant mix has a 3 month shelf life. Make sure baking powder is not old. CHECK THE EXPIRATION DATE BEFORE USING!!!

Make sure to use buttermilk. Do not substitute anything else.

Ingredients for one batch of “Instant” Pancake Mix (affords 3 recipes of Instant Pancakes, recipe below*)
6 cups all-purpose flour
1 1/2 teaspoons baking soda
3 teaspoons baking powder (check expiration date first)
1 tablespoon kosher salt, DO NOT HEAP THE MEASURING SPOON !!! (Also,some people that tried regular salt were disappointed at the results)
2 tablespoons sugar

Combine all of the ingredients in a lidded container. Shake to mix. Do not omit shaking before measuring when making up the actual pancakes. Use the mix within 3 months.

INGREDIENTS FOR ONE BATCH OF PANCAKES:
"INSTANT" PANCAKES*:
2 eggs, separated
2 cups buttermilk May use reconstituted dry buttermilk mix.
4 tablespoons melted butter
2 cups "Instant" Pancake Mix, recipe above
1 stick butter, for greasing the pan
2 cups fresh fruit such as blueberries, if desired. If you use bananas, they will be great and may taste like Bananas Foster. : )

Heat an electric griddle or frying pan to 350 degrees F. The electric griddle is the best way to go!

Heat oven to 200 degrees F so that you can keep the pancakes warm until eating. Place the serving platter into the oven to warm. This way the first pancake will not stick to the serving platter like glue.

Whisk together the egg whites and the buttermilk in a small bowl. In another bowl, whisk the egg yolks with the melted butter.

Combine the buttermilk mixture with the egg yolk mixture in a large mixing bowl and whisk together until thoroughly combined. Pour the liquid ingredients on top of the pancake mix. Using a whisk, mix the batter just enough to bring it together. Ten seconds tops. Do not over mix. THEN…WALK AWAY!!!!!!!! For 10 minutes or so. This will be absolutely the last time you will be stirring this batter. From now on, the only disturbing of the batter you will be doing is to ladle it gently out of the bowl and into the griddle. Don't try to work all the lumps out.

Check to see that the griddle is hot by placing a few drops of water onto to the griddle. The griddle is ready if the water dances across the surface.
Lightly butter the griddle. I melted ˝ stick of butter in a small pan. Have it on the side. Pour some of the butter into the skillet. Wipe off thoroughly with a bunched up paper towel. Don’t rub it hard, to death, just gently take a paper towel and swipe the butter off. (No foamy or greasy, greasy looking butter should be visible.) I kept using the same paper towel.

GENTLY ladle the pancake batter onto the griddle and maybe swirl the pancake a little bigger with the bottom of the ladle if you want to and sprinkle on fruit, if desired. When bubbles begin to set around the edges of the pancake and the griddle-side of the cake is golden, gently flip the pancakes. NEVER, NEVER, NEVER flip a pancake twice, as it will make it tough. Continue to cook 2 to 3 minutes or until the pancake is set.

Serve immediately or remove to a towel-lined warmed baking sheet and cover with a towel. Hold in a warm place for 20 to 30 minutes.

Yield: 12 pancakes (or 6-7 plate size pancakes)

If you follow these directions, you will have success. If you try to reinvent the wheel, or the round pancake by using other techniques, you may or may not fail.

Mom's lesson on salt...
You can buy a box of kosher salt and use it in all of your cooking. Boxed salt that we usually use has been described as “good for gargling only.” The sea salt we use from Costcos, where you grind your own is good for topdressing, like at the table. Kosher salt is good for cooking and baking. It is less salty than the boxed stuff you are used to using.
