I think this refers more to the engine code and the quality of the content than the appaerance itself... If the engine only remains stable for 10 minutes, then make sure all your demos are less than 10 minutes long, that's acceptable in a controlled situation on a very tight schedule. If there are a few funny spots on the Marine's texture the artist never got around to touching up, or if the terrain doesn't have a "neat" edge and you can jump off into the void, then avoid showing the spots on the Marine and never go near the edge. There are all sorts of little compromises that can be done in an official demo that would be unacceptable in a shipping game.
