I always took it as the state of existence that comes after rampancy (if the AI doesn't get put down first), inferred by the way Durandal's acting in M2 versus how he acted in M1.

AFAIK the closest there is to another in-game reference to metastability is in "Defend THIS!", where it's mentioned that "the Stable Rampant AI" is the "Holy Grail of cybertronics". If we want to factor in Destiny 2, there's Strauss getting excited over finding a metastable alien (presumably Jjaro) AI.

Also, wrt: Durandal caring more for his human forces in Infinity than M2: he wasn't exactly super-nice to them in M2, but he did mention evacuating as many people as he could after his ship crashed. So there's that.
