Well, if the Mac you buy isn't two or three years old or older, then... YOU WON'T BE ABLE TO BOOT INTO OS9 . Apple did it to try and kill OS9. On my eMac, I can only use OSX. But, my other two computers are old enough to boot into OS9. There are NO hitches when booting into OS9. That is because you're not running OS9 through OSX, you are running OS9 itself. The problem is that booting into OS9 is annoying. That's it. If you've got a dual-boot system, then you're good to go, OS9 on your new computer will run like, well, OS9. If you DON'T have a dual-boot system...
Forge will work. It will automatically set your computer to 256 colors, and it'll slow down most apps alot (even Safari), but it'll work.
Anvil, too, will work. I don't use it much, so I don't know the problems with it in OSX. (Oh, Hakvil works too-that's what I use)
I don't know about Chisel. I've never used it myself for much more then toying, and that was back on my Beige G3 running OS9.
