It's similar to why pro baseball (which has its own issues, I know) doesn't use metal bats. The team games that MLG plays are only 4 on 4, so that more or less rules out good vehicle games. Now that I think about it, the only weapons the pros don't often use are ones that aren't usually used in multiplayer anyway, namely the plasma rifles and the sentinel beam. Pretty much every other weapon is used, just not dual wielded.
