Think of it this way:

The only ways to make yourself safe when you've been engaged in the air and are not fighting back are to get FAR ENOUGH AWAY that they can't really put effective fire into you, to get far enough away that terrain and obstacles interject themselves between you and your pursuer, and to actively dodge fire. The first is next to impossible unless they decide to forget about you; you're traveling at the same speed, and on the straightaway you're at a dead heat. Moreover, Banshee weapons reach far, and you've got to go a very long way indeed before you've reached the point where they can't make your life hellish. The second is quite feasible, depending on the map; if there's lots of twisty hallways, boulders, or whatever handy, you make be able to juke through it with relative safety... but remember that it only takes a few moments of unimpeded fire to drop you, and also that hits tend to begat more hits, due to plasma freezing. The third is the most effective but also the least useful within the context of "escaping," which, again, is not something I advocate; as you say, the more effort you put into dodging like a madman, the less you're actually hauling your ass out of there, and getting out is the only thing that will keep you alive in the long run (the extreme case would be to just stay where you are and keep dancing around, which would mean that no matter how long you lasted, you're dead eventually). So the answer is to combine escape with evasion in a happy compromise, and movements that let you maintain your escape vector while providing some degree of save-your-ass-itude are the most helpful. Such as shrugging.

Remember, though, that this is a losing battle from the start. You'll have better luck almost always if you spin your ass around and lay into your assailant. That's the nature of it.

I'm sure there is a certain breaking point where you will have better chances running than fighting, but I suspect it is both extremely low and somewhat variable.

Again, you're not going to outfly him anyway unless he's drunk; Banshees don't have nitro.
