Since the ISOs are in the older HFS (pre-OS 8.1), your best bet is to use the Basilisk II or SheepShaver emulators. Basilisk II is more stable:

The releases on Emaculation.com even contain a ROM (in the Zip archive), so all you need is an OS disk, which is also provided on the site elsewhere:

Just add the starter disk to the preferences, tweak the prefs to your choosing (frameskip should be set to 0 for full refresh rate), add the jptrilogy.iso and/or jpmapcollection.iso files as CD-ROMs, and you’re good to go.

Note that in order to read the Japanese file names, you’ll need a Japanese version of Classic Mac OS; however, most of the files on the map collection disc are in English.
