The only way to do what you want was demonstrated by Frigidman a long time ago - you need to use a stationary elevator and use moving platforms as walls. This means having your floors on the same level with each other - 5D style. It can be done for two levels with an elevator that exits on the opposite side on the second level, but the two levels cannot interact with each other - no connecting stairways, no views that include windows from the other level etc. I think it's probably best to stick with elevators without ceilings - unless you want to take on the challenge of writing B&B code.
