FYI:

I think I figured out the problem.
I have the latest version of Stuffit Deluxe and a BIG change from version 7.5 to version 8.0 is that the Cross-Platform options dialog has disappeared and there is no longer a way to produce a MacBinary file from a Mac .sit file.
So!
Unless I missed something, PC users should stick with earlier versions of StuffIt and not upgrade if they wish to retain cross platform support.
On a side note, sorry about using this story forum for tech support.
