I think the 2.0 demo is on the Marathon CD. Not sure about A1, but laz or Hamish might have a copy.
Your other reasons are pretty understandable, though.
Also the physics might be different for monsters, and possibly
: the shapes, so I wouldn't really be up for dealing with all that again. I
: could maybe look into generating the map layouts, since I think Hopper's
: xml had the demo levels in there, if someone wanted to take them and do
: something with it. The effort to understand the collections and stuff to
: place scenery and texture the maps would not really be worth it to me for
