Capture cards that can screengrab 720p are typically capable of recording 720p video. Chances are FyreWulff could do 1080i as well (it requires only a little more bandwidth than 720p, so it's usually available on 720p-capable stuff), but there's no point using a 1920x1280 capture when your source is 1280x720. (Even if your source was 1920x1080, you might consider using 720p over 1080i for capture of stuff in motion. 1080i is just as good as 1080p for stills, but as much as I'd think that 1080i 30fps rendered stuff should be able to be deinterlaced perfectly, it never seems to actually happen, and bad deinterlacing can kill a screenshot or even video much worse than a lower resolution would.)
