In The Flood: The Definitive Edition, pg 22, the Chief is considering the sensation himself, "His skin itched and stung, a side effect of the cryo gases, but he quickly banished the pain from his awareness. He had long ago learned how to dissociate himself from physical discomfort."

So, adding that to your source on a third-person tech statement would seem to indicate the Mjolnir doesn't protect the wearer's skin from cryo-exposure.
