According to what I've read on the MSP and found from asking around, the Armageddon Beast was a big red thing that had a rapid-firing pellet attack. It was cut because Bungie couldn't find a way to make it fun to fight.
The Hound was a giant cross between a worm and a slug. It was intended to be a companion to the Hunter, with only a melee attack. I rememer hearing that it was supposed to stay in low areas -- it would lose interest in the player if he climbed to a higher part of the room. The Hound can still be seen in one of the M1 Pfhor textures, in the form of what appear to be embryos in wall tanks.
