If Flood ships were detected in a system and a ship was tracked making landfall, the presence of billions of sentinels surrounding the crash area would effectively quarentine the Flood, preventing the rest of the planet from becoming infected. The Flood can only grow by feeding on populations. Also remember that flood infection forms cannot pilot ships, so once their supply of brain forms runs dry they'll be confined to the planets they are already on, able to be disposed of at will. Especially since the number of sentinels would be almost limitless.
