Tempus Irae.
The runner up would be Rubicon. Rubicon X's super secret Tycho plank is great, but you have to get through one of the most unpleasant levels in the game (*cough* Sodding the Logs *cough*) before you can start it.
The bigger problem for streaming is that Rubicon has some very large levels that are easy to get lost in. They're modern works of art, and very impressive feats for the Marathon engine. However, I don't think they'd be well suited for a stream, unless you were hewing closely to a guide. And that's not much fun, either.
Tempus Irae had some very impressive works of architecture. The man responsible for several of the maps and the storyline joined GregK's Double Aught to work on Duality.
That's why it gets my vote.
