The floors and ceilings are flat because the Marathon engine is incapable of rendering them at any other angle. The Marathon probably does not use artificial gravity because, if it did, your motion sensor would be screwy when onboard the Marathon (as it is when onboard the Pfhor scoutship, which does use artificial gravity). Deimos (Marathon IS Deimos) might have enough mass to provide adequate gravity by itself. If that's the case, then the levels must radiate outward from the center of gravity.
