To me it looks like it's just "dummy" text they put in there, to show how the real copy would be laid out when it was written. Designers often do this when they're working on an early version of a piece and they don't have the text to go in a given space. Just fill it in with gibberish, and you have a pretty good idea of what it'll look like when it's done. There was (maybe still is) even a QuarkXPress plugin called Jabberwocky that did this for you. Why they put in real Latin words like "canum," though, is anybody's guess.
