A lot of that is due to the 256-color limit on the original, and the way shading worked with so few colors. But some of it is due to the difference in screen calibration between then and now.

Classic Macs used a gamma of 1.8, which makes the same image appear brighter than when viewed on a PC or modern Mac with a gamma of 2.2. Emulators replicate this difference, but the OS X app doesn't. Aleph One has this same issue, at least on OS X where the brightness slider is broken.

In OS X, you can switch your monitor to get a view more like the old days. Go to System Preferences > Displays > Color > Calibrate... and choose "Gamma 1.8" in the wizard.
