I suspect the only fully legal answer is "buy yourself a Mac of a suitable age". The ROMs are going to be fairly well protected IP; I doubt Apple would be all that happy about people distributing them. Sorry to be a killjoy, but it's a similar situation to games that are distributed as "abandonware". Unless you've had an official "go right ahead", it's best to assume you're not allowed, I'm afraid.
I do hope that somebody can prove me wrong, though.
