You can extract the music from the Marathon 1 Music file with a utility called the Marathon Music Exploder; it should be in the Archives somewhere. iTunes will be able to import the resulting movies.
The music files for M2 and MI are just AIFF files, they should play if you change the file type/creator to that of real AIFF files (I don't remember quite what it is).
