Sure, the Pfhor aren't literally insects, but it's one of those cases in Sci-Fi where an alien is meant to be a direct analog to an Earth species so we can refer to it by its Earth name because of metonymy.
So, yeah the Pfhor aren't actually insects, but their "skin" is referred to as chitin, I believe "ichor" is mentioned in relation to whatever they have in place of blood, and Durandal flat out refers to them as "insects" in the same way that in a scifi cliche aliens might refer to humans as "monkeys".

Insects have all sorts of numbers of eyes. If any taxanomical group were to have three eyes (seven with the enforcers) I would put my money on insects.
