Maraton Music - Audio Question

Ok I knew very little about Audio, I just want to state that upfront.
When a computer offers a Digital Line Out, that's a real digital signal correct?
Is it possible to track down a model of Mac that offers a digital lineout, then run the audio through that port and capture it with some kind of fancy audio recording device (say another Mac that accepts digital in?)
I think off hand the Sawtooth G4s had a Digital Line Out, I know they can run OS 9, no clue about earlier OSs.
