Think about what goes on in any given level of Halo. Any kind of event, from a marine giving you a situation report to the flood bursting through doors, is scripted. The opening part of the game, where you're running to the bridge unarmed, is basically one large scripted event that you're able to interact with (doors closing, the elite that ducks back into the hall when you come through the door, the marine that leads you to the bridge). Anytime Foehammer gives you a warthog, or a Covenant dropship brings more trouble, it's the result of scripts and triggers.

Games that lack that level of interactivity, such as quake3, are just geometry and entity placement, yes (though there is scripting to an extent even there). With the high calibre of games being released these days, scripting is everywhere.
