While the non-HCE Halo games have, almost all of them, gotten more more replay value than any non-Halo FPS games, HCE has gotten me vastly more replay value than any of the other Halo games. If I was stuck on a desert island, I'm not sure I'd even consider many of the levels from the other titles; perhaps The Ark or The Covenant would be candidates.
Another consideration is what about the levels makes them replayable and good. I've actually played The Maw many times, but its beauty derives largely from its juxtaposition with the stuff before it, which on this island I wouldn't have access to. If I only had one level, it would need to be one which is capable of standing on its own.
And of the potential candidates, I think I'd go with Two Betrayals. Its got an incredibly internally consistant and directed feel without completely requiring the levels around it in order to work. It has, IMO, the most diverse combat opportunities in the series. It's long. It has what are, IMO, the most functionally grand battles in the series. And I've probably spent more time staring at stuff in Two Betrayals than on any other level in the series; AotCR is beautiful, Halo is beautiful, Silent Cartographer is beautiful, but those vast, peaceful snowy canyons in that teal light with those eerie windy noises... Wow. Never gets old, never gets unwow. Seriously, at the end of the final canyon, up from the high snowy ledge, I could just walk around and stare down at the two-story bridge and the canyon below for hours.
