The symbol is an ampersand, which was the 27th symbol of the alphabet in france where the word originated. The Square root of 27 is 3. 15, 51, and 9 are divisible by three. The others add up to 96 which is divisible by three.
96 / 3 = 32.
32 - 26 = 6 = f
OR
32 - 27(including &) = 5 = e
Just a guess.
